Cauliflower Fried Rice
▫️ Cauliflower (2 heads) or pre-bagged (40 oz)
▫️ Whole eggs (2)
▫️ Ground chicken or lean ground turkey (1.5 lbs)
▫️ Bell pepper (1 large)
❗️Mince cauliflower florettes in a food processor. The texture will be like rice. The riced cauliflower comes pre-bagged, if preferred. Stir fry the ground meat with seasonings of choice and with butter spray until light brown and then add the bell pepper. Finish by adding the riced cauliflower and eggs. Cook until golden brown.
